Cookie Dough Chunk Ice Cream

Is it really a recipe if we’re just combining 2 things? Yeah it is - The best kind of recipe!  
Just a note:  Once you start working with the ice-cream you need to work relatively quickly so your ice-cream doesn’t melt too much.  Get everything ready first and then throw it all the in the bowl and mix.  DONE!


2 cups vanilla ice-cream

3-4 balls of raw cookie dough of your choice (we used chocolate chip)


If you’re adding chocolate sauce – make that first so it can cool before you add it to the ice-cream.

Make the Chocolate Sauce

(does this make it a “REAL” recipe ?)
2 tablespoons cocoa
tablespoons  Water.
tablespoon golden syrup.
1 1/2 tablespoons sugar.
1 tablespoon butter.
1/2 teaspoon vanilla.
2 teaspoons cornflour
Place all the sauce ingredients in a small pot and melt in a pot on a medium heat until combined, stirring all the time.  Once it starts to simmer – keep stirring until it thickens to a thick pouring consistency. 
Let cool to at least room temperature while you sort out the rest of the ingredients -if you need to, chill it in the fridge - you want a spoonable consistency,


Now, get your ice-cream out of the freezer and let soften – just enough to scoop – don’t let it melt! 

Grab your cookie dough from the freezer (whichever one you want) and chop from frozen into bit sized (or whatever size you want) bits – leave aside some to sprinkle over in the bowl later

Put your now soft-enough-to-scoop ice-cream in a bowl and stir slightly.  Throw in your cookie dough and stir to combine

If your adding the chocolate sauce, scoop/pour some of the sauce (if you're like us you might want to save some to heat in the microwave sightly and poor over when you eat it if you want) and stir gently to create “streaks”

If you want, you can eat it now – but if it’s a little soft, put it back in the freezer for an hour or so until it is at the consistency you like it.

Theoretically, this serves 4 for a desert, or maybe 2 if you just NEED ice-cream NOW
