Easy Coffee Ice Cream with Cookie Dough Chunks

Because the last ice cream recipe wasn’t really a recipe, rather a list of ingredients to mix together – here’s one for the people who want to make their own ice-cream - no ice-cream maker required

INGREDIENTS

2 tablespoons fine ground instant coffee (or make it mocha with 1 tablespoon coffee & 1 tablespoon cocoa)

1 ¼ cups cream

⅔ cup sweetened condensed milk

4-5 raw cookie doughs we used Fusion

METHOD

Place all ingredients except the cookie dough in a bowl and whisk (we use a stand mixer – but if you don’t have one, you can easily get it done using a hand whisk) until you have soft peaks and the coffee is dissolved evenly. 

Chop 4-5 raw cookie dough into bite sized chunks – leave a few bits aside to sprinkle over the top at the end.

Stir the cookie dough through the ice cream mixture and place in a container with a lid (or if you're odd like us; grab the ice cream tubs you just happen to own, and make a Just Dough label  - cos - why not?)

Sprinkle over your extra dough bits and freeze for at least 6 hours before eating.
