Not So Humble Crumble Oaty Anzacs

These are the simplest Anzac bikkies ever, all made an a pot and ready to bake in a few minutes.  Don't just  limit them to April - make them all year round

INGREDIENTS

1 Bag (420g) Not So Humble Crumble

1 cup coconut (we used shredded but desiccated would do too)

2 tablespoons golden syrup

¼ cup boiling water

1 teaspoon baking soda

100g chocolate (optional) 

METHOD

Preheat oven to 180 and line a baking tray with baking paper

Place the  golden syrup in a pot big enough for all your ingredients, and let melt slightly on a medium heat.  

Dissolve the baking soda in the boiling water and add to the pot.  Mix to combine

Add the Not So Humble Crumble and coconut to the pot and stir until the mixture is evenly mixed and is clumping together (about a minute).

Scoup out around 2 tablespoons of mixture and roll to make a tight ish ball

Place on the lined tray with space between them and “squash” slightly to make a flatter disc then bake for 12-15 minutes until golden

Let rest on tray for 5 minutes to set slightly

They’re ready to eat!

But...if you’re like us and you want to make them a bit “schmancy”

Melt the chocolate in the microwave or double boiler and dip the cookie in chocolate then place on a cold tray to set

Are they set?

...NOW they’re ready to eat!
